I don't consider a Production Meeting before you have a signed contract excessive.
Two is pushing it but three - I wonder who is conducting these meetings and what has not been discussed/decided by now. Email communication works wonders in a situation like this. I would ask the Artistic Director if there is a specific area of concern that they have and if so, what I could do to assist that particular area. I would also ask what is still not determined/decided about the production that requires yet another production meeting. All very graciously and with the intent to help... It's a tricky situation as you are making a first impression with these people. But always stay true to your boundaries and listen to that little voice in your head...

I call each and every spot cue.
Each and every show.
This way, if someone new has to step in, the flow of my show doesn't change.
Because sometimes, things go wrong and I need to make the decisions for all.
This way, everybody is on the same page.

I start with "Ladies & Gentlemen."
I then move on to "Hey Guys!"
Finally it is "I must have QUIET in the house."
The gradual move to directive is usually accepted as they realize the journey taken...

You sound like you have done your homework, good for you.
IMHO, the AEA rules and guidelines work well because they make sense.
AEA members must elect a Deputy, decide on 60 minutes vs 90 minutes for the meal break and in some cases vote to allow archival videotaping (or electronic capture). Every situation is different so refer to the appropriate rulebook.
We are all people. Treat us respectfully and remember we call it a PLAY. AEA or no...
