Employment / Confidentiality Question

I am appling for an apprenticeship and one of the requirements is 5-7 pages that represent my stage management (paperwork, script pages, etc...) I am planning on using a contact sheet as one of my examples and was wondering how to handle confidentiality. I have blacked out all of the phone numbers and am unsure of whether to black out all the emails as well...or is it ok to leave everything? Any advice/ opinions?

I am currently in school in good 'ole WI, but I will be back in Chicago for Break Dec-Jan and would love to meet some SMs before I move back for good (and hopefully find SM work).
