Favorite brown bag lunch?

Ok, so I'm headed into rehearsals and have to come up with nutritious, easy to prepare, eat-on-the-go lunches. My favorite for awhile were hummus wraps with roasted red pepper and fresh spinach but I'm kinda getting sick of the stuff I've been having. What are your favorite no-fuss take along lunches/ meals??

Having a crock pot is a godsend, because I make a HUGE batch of anything with very little work.

I like the personal-sized soup-in-hands, chicken salad, and hamburger patties.

My standard sandwich is, as I've heard it been called, a watchamacallit. Turkey, ham, lettuce, cheese sandwich with whatever toppings or extra you desire.  I enjoy some spicy mustard on wheat - also great in wrap form.

There's always the good-ole peanut butter (& fluff in my case) and leftover pasta.

Frozen leftover medly.  Usually meat/starch/veggies from a previous meal packed up in one tupperware and zapped and mixed together.  I'm currently finishing the last of the cut-up pork chop/macaroni and cheese/broccoli batch, but I did get corned beef and cabbage earlier this week!  If you're worried about it getting dry in the microwave, put a small pat of butter or margerine on top of the whole thing before you freeze it, and mix well, in the middle of zapping.
Get a piece of fruit on the side, some pretzels or crackers to snack on later, and a small sweet (currently a row of Peeps in a ziplock bag) and that'll keep me going from 7:30 am to 7:30 pm when I get home.

If I can't pack a sandwich, rice is really easy to make a lot of and it stays good for a very long time. If you grill some chicken beforehand you can just top the rice with that and some veggies.

Children's snacks are great - Chewy bars, animal crackers, pretzels. The best part is that they're usually healthy so you won't feel gross during rehearsal!

My favorite is tortellini (of the frozen variety), boiled in a big batch and then separated into however many ziploc containers. Then, on the day of consumption, I would just add some balsamic vinegar, some fresh basil, and various varieties of tomato cut into bite size pieces. Also, pesto is great instead of balsamic vinegar, but it's more work.

This was great for me, because I did an outdoor show and we didn't have a refrigerator there, and this dish is actually best at room temperature - you aren't supposed to refrigerate fresh tomatoes, and I always found it tasted a little weird warmed up.

If you're talking sandwiches, I've been trying to "fancy up" my standard turkey and cheese.  So I went for whole wheat tortilla, spread with a bit of cream cheese, some chives or green onions, a slice or two of turkey, and some sliced avocado.  Roll up (if it all fits) and enjoy!  Sometimes I also add dried cranberries.  Yum.

Salads are good too if you add lots of yummy stuff to the lettuce.  Cut up sausage, chicken, or some cooked ground turkey, chickpeas, wild rice, various nuts and/or seeds, feta or goat cheese crumbles, dried fruit or a cut up canned pear...  All of those make great ingredients for salad.

If you have access to a microwave, of course your choices become much more broad, and mostly in the leftover area.  I love leftovers!  Last year I was really smart and, before each long stint of work, I took a day or two to make a variety of casseroles and other meals (ziti, tuna noodle, chicken tetrazzini, meatloaf, bean soup, chili) and then freeze them.  It was great to have them available to just shove in the oven (if I remembered to thaw them) when I got home from work.  And then of course I had the leftovers for lunches for a while.

I just magically discovered the most delicious sandwich I've had in a while.

Deli sliced turkey with hummus (instead of mayo) on whole wheat bread.

More fiber, less fat, more yummy. Add lettuce and tomato if you like.
Next time I get to the store, I'm going to pick up other varieties of hummus (other than original) and try that on my sandwiches. I'll let you know how that goes for me.

One of my favourite foods is a nutella sandwich on whole wheat bread.  Failing that, I second the turkey and hummus--you can usually find enough varieties of hummus to keep entertained.  In the winter, I'll put congee (Chinese rice porridge with chunks of fish) or leftover pasta in a thermos.  If I'm working a show where I don't have somewhere to keep a lunch from getting squished (thinking hectic 24hr theatre festivals) then I like egg bagels with pepperjack and chunks of salami.
As far as snacks go, I find dried mangos to be very good (I get them from Costco).  They're flavourful and not too dry, either.
